Smoked Ham
The hind legs of a hog from the hip to knee. Our hams are brined, aged, glazed with cassonade and then smoked over low temps. The hams are nitrate and nitrite free (which makes them look more brown than pink).
Pasture-raised pigs, no growth hormone or antibiotics. Fed organic grain, cheese whey and non-GMO spent grains.
