Intercity Custom Meats, Beef Steak Ribs, Grade Aa/Aaa, End To End, Fresh

 285 Grams/Each, 12 Eaches/Case

Fresh beef rib steaks are boneless and weigh 285 grams each. These steaks are grade AA/AAA and are end-to-end cuts. The boneless rib steak is cut from the ribeye (a boneless fat cap off rib). This steak has an abundance of marbling and fat to create great flavour. This Just-In-Time item ships from our warehouse within a day or two upon arrival from our purveyors, so you can prepare it at peak freshness.

Product Description

  • The ribeye steak is both flavourful and tender. Its fat marbling makes it very good for fast and hot cooking. One suggestion for a perfectly cooked ribeye steak is to let it sit at room temperature for an hour before cooking. Then grill on high to achieve charring on both sides. Keep seasoning simple: sea salt and freshly ground pepper.
  • Portion control offers many benefits, including uniform cost per serving and even cooking times. There is no waste, and using portion control saves time, space, labour and resources you might not have.
  • Beef is a very good source of protein, vitamin C, vitamin B-12, iron, phosphorus, copper and selenium, and is a good source of riboflavin, niacin and zinc.
  • Cook steak to perfection by removing steak from the heat when the thermometer reads 2°C less than preferred doneness, and let it rest for five minutes. The ideal temperature for rare is 52°C; medium-rare, 55°C; medium, 60°C; medium-well, 65°C; and well done, 74°C.
  • This item should be stored in the cooler section of your foodservice operation.
